Soul Soother, aka Cheese Dip

Long week.  Hard week.  Hence, the only proper course of action last night was to (1) whip up a batch of never-fail margaritas, (2) coat my soul in a protective shield of velveeta and butter (CHEESE DIP!!), and (3) spend some quality time with Liz Lemon (…”Good people of Swingles!!!”…)

Yes, as PB would say, that is lonely cheese dip right there.  And, perhaps more opprobrious, a lonely margarita.  But, trust me, it was warranted – and hey, I was being responsible by consuming at least half the cheese dip by coating apple slices in its deliciousness.

Here is a gift for you today.  Cheese dip recipe.  Trust me, better than queso in a jar.  I don’t always follow it loyally, but it is a perfect spring-board to inner peace.

Soul Soother, aka Cheese Dip

1/2 stick butter

4 Tbsp flour

1 tsp paprika

1 tsp chili powder

1 tsp cumin powder  (plus some whole cumin seeds if you have them)

1 tsp pepper sauce

1 tsp cayenne pepper

1/2 tsp garlic

1 Tbsp ketchup

a dash of salt

some diced up a jalapeños

2 cups milk

1/2 pound American Cheese (VELVEETA!!!)

Melt butter in pan and add flour. Saute together until pastelike. Add remaining ingredients including milk. Then and the American cheese. Stir in a double boiler until thick. (double boiler is key)
